I went to a VR arcade in NY once. It was quasi-impressive. They supposedly had a room much like the one you just described, but it was like $50 per minute or some outrageous price. Sounded pretty awesome though.
I did use a regular headset however, and stood in a weird 'ring' with sensors and a semi-rolly floor. There was a gun, and I think a glove but I can't totally remember. When the headsets were on you had pretty fair peripheral vision, you could see your hand and a mock of where your arm would be, plus the gun (but it looked bigger and more impressive in the virtual world).
It started you out in a spaceship, and I basically proceeded down a few halls zapping low polygon-count aliens. Then I got to 'jump' down a huge tunnel that dropped me into space, which I have to admit was pretty fucking cool. I got the tingly feeling and everything.
I'll bet the technology is far better now too, this was like 4 years ago.
